Moon Cake

This is one of our favorite family recipes. Moon Cake. So yummy! Here are the ingredients you will needs and you will need to preheat your oven at 400 degrees.
Here is how you make it: To make the crust, in a saucepan put 1 cup of water, 1/2 cup margarine and bring that to a boil. Remove from stove.
Then add 1 cup of flour ALL AT ONCE stir until mixture forms a ball.
Then add 4 eggs ONE at a time stir until all incorporated.
Spread the mixture into a greased 9 X 13 pan.
Bake in your preheated 400 degree oven for 30 minutes. DO NOT open the oven during the baking time. When the 30 minutes are up it should look like this. The crust remind me of a cream puff.
While the crust is cooling mix the middle layer. In a bowl put an 8 oz. brick of cream cheese (softened) in a bowl and beat until fluffy. Then add 3 1/2 cups milk and beat them together.
Add to the mixture 2 (3oz.) boxes of instant vanilla pudding and mix.
Spread that onto the cooled crust.
Top with whipped topping. I whip heavy whipping cream but you can use cool whip also. Drizzle chocolate syrup over the top. And if you like coconut like I do then you can sprinkle that on it as well. I only do part of the top because not everyone in this house likes coconut which is SO wrong. Ha!

When the Moon cake is completely cool slice and enjoy!
