Me-Maw's Banana Cake

It seems more times then not I have bananas that have become over rip. I usually make banana bread but my favorite thing to make is my Me-maw's banana cake. It is so yummy and every time I make it I think of her. She was amazing and I miss her so much!
Here are the ingredients that you will need. 2/3 cup butter (softened), 1 2/3 cups sugar, 1 1/4 cups bananas (I usually throw in about 4 bananas I never measure them), 2 eggs, and 2/3 cup of buttermilk. I rarely have buttermilk on hand so all you need to do to make buttermilk is put 1 Tablespoon of white vinegar in the measuring cup and fill the rest with milk. Let it it sit for about 2 minutes and you will have buttermilk, super easy. Beat all of those ingredients together until fluffy.
Then add the bananas mix well. Add 2 1/2 cups flour, 1 1/4 teaspoons baking powder, 1 teaspoon soda and a 2/3 cup of nuts (nuts are optional). Mix everything together until all the ingredients are incorporated.
Pour into a greased 9x13 pan and bake on 350 for 35-40 minutes or until the knife comes out clean.

When there is 10 minutes left on the baking time for the cake you will need to start the frosting. You need to do this in a sauce pan. Melt 1/2 cup butter, 1 cup brown sugar and 1/4 cup milk. Bring it to a boil for 1 minute then take it off the heat.

Using a hand mixer beat in 3 1/4 cups of powdered sugar and after everything is mixed together pour over the warm cake.
Let the cake cool pour yourself a cup of coffee and dig in to Me-maw's banana cake! Yum-O! Enjoy!

A Little Scare

Last week we had a little bit of a health scare with Ky. Most of you might already know but a week ago Monday she started complaining that her ears were hurting. By evening she was REALLY complaining so I took her to immediate care and sure enough they said she had an ear infection. We went to Wal-mart right away to fill her prescription and as you can see in the picture she was just to sick to even walk around. So sad!

After arriving back home I gave her the meds and within 10 minutes she threw it all up and continued throwing up off and on all night and the next day. I knew by Wednesday morning she was in trouble. I called the doctor and took her in. She had lost a bunch of weight and wasn't wanting to walk or talk anymore. So scary! They administered antibiotics via IV for the next 3 days.

So thankful that I have a sister friend that is a nurse and works in the building and could come and squeeze my neck and calm me down. Thank you Denae!
I have to tell you the milkman is one amazing daddy. He is always my rock. So patience and calm even though he told me later how worried he was, he never let on.

Finally after 3 days of IV antibiotics she made a turn and became her old self again. We were so grateful for all of the prayers, calls, texts they were such an encouragement. We are so grateful! Ky especially loved her teacher's visit with homemade get well cards from her classmates. So precious!
She also loved a special visit from her neighbor friend Mallory who came to hug her neck.
Finally after 1 week Ky was released and back in school. Hallelujah! We were told that the infection that started in her ears somehow got into her blood stream and that is what caused her to go down hill so quickly. So thankful to all of the staff at Via Christi for their amazing skills and for making our girlie all better. So grateful!

Clothing Swap

Since all of us were going to be together after the funeral. We thought let's clean out our closets and have a clothing swap. We went to lunch at the Blue Moose in Topeka (I highly recommend it, so yummy!) and after ordering our food Jaryn started showing us items and if we wanted it we just let her know and it was ours. This was the best kind of shopping. The best part was wondering what the other people in the restaurant thought. Ha! I'm sure they thought what a bunch of crazy women. We didn't care it was fun and free!

Our food arrived and it was so de-lish!

I highly recommend if you have some friends and want some new outfits, have a clothing swap. It a fun time and I promise you, you will make some great memories!

We laugh together and We cry together

I have said before that about a year and a half ago I prayed for a friend. A friend that would not judge me, but would encourage me daily, build me up when I was down, showed me Jesus not only in her life but in her actions and would love me with ALL of my faults (I have a lot of them so this is a tall order). But, God in His mercy and love not only brought one friend that had all of those attributes but he gave me 12. Seriously 12! And I am encouraged daily by this tribe of amazing women. So Grateful! Over the last few months a few of us have been through some heartbreaking events. Our sweet sister Gale's daddy was diagnosed the day before Christmas Eve with stage 4 pancreatic cancer. It was a hard blow to all of them and just 17 days after he was given the news Jesus called him home. We all dropped everything to be there for her on the saddest day of her life. The service was SO touching but when Gale played piano for her daddy at his service, he had asked her to, that is when I saw what an incredible strong women she is. I will have to say a few tears were shed.

I am so thankful that we could come together for Gale. We all traveled from 3 states so that she would know how much she is loved by all of us.

I hope that we were able to help her make it through the hardest day of her life by being there for her. And I am SO thankful for a God that not only hears me when I pray but has the power to answer beyond anything I could ever fathom.
